Ingredients:

  • 3 large sweet potatoes (about 2.5 lbs/1.1kgs)
  • 1lb/250g tart apples such as Granny Smith or Bramley
  • 3 1/2 ozs/100g caster sugar
  • 2 ozs/57g butter
  • 1 tsp cinnamon

Method:

Peel sweet potatoes and cut into even sized chunks. Boil in salted water until tender but not overdone

Melt butter in pan, add sugar and sliced apples.

Fry until caramelised.

Mash sweet potatoes and apple mixture and serve.
